APPLE PIE OATMEAL BARS:
1.5 cups rolled oats
2 cups oat flour
1.5 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp baking soda
pinch of salt
3/4 cup apple sauce
1/2 cup maple syrup
1.5 tsp blackstrap molasses
2 medium apples sliced
– MIX all ingredients except apples in a large mixing bowl. Press out half the mixture in a lined 8×8 baking pan. Add the sliced apples and gently press them into the oat layer. Then add the rest of the oat mixture on top. Sprinkle with extra oats and cinnamon.
– BAKE at 325F for 30 minutes.

PUMPKIN PIE OVERNIGHT OATS:
1 cup rolled oats
1 tbsp chia seeds
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/4 cup pumpkin puree
1 cup plant based milk
3 tbsp maple syrup
– Add all ingredients into a small jar. Seal and place in fridge overnight.
– Top with your fav toppings! I used coconut yogurt (for creaminess), raisins, and pecans.

MORNING SWEET POTATO:
– BAKE sweet potatoes at 350F for about 40-50 minutes (or until cooked through)
– Store them in a container in the fridge and reheat in the morning!
– Top with coconut yogurt, chopped walnuts, a sprinkle of cinnamon, and a drizzle of maple syrup!

MUESLI:
1 cup rolled oats
1 cup puffed rice
1/4 cup sliced almonds
1/4 cup pumpkin seeds
2 tbsp hemp seeds
1/4 cup raisins
1/4 cup sliced dried mango
1 tsp cinnamon
1/4 tsp- 1/2 tsp ginger
2 tbsp maple syrup
– COMBINE all ingredients except for dried fruit in a large mixing bowl. Make sure everything is well coated in the spices and maple syrup.
– Spread on a lined baking sheet and bake at 350F for about 15 minutes tossing a few times.
– Once cooled, mix in your dried fruit and store in an air tight container.

Just made the APPLE PIE OATMEAL BARS.  Worked out pretty well.  I added a little bit of brown sugar and some chopped up walnuts.  Next time I might just chop up the apples and add to the mix.  That way you don't need to deal with the layering (I didn't have quite enough mix for the top layer).  Otherwise they were delicious!

These are all great ideas and recipes, Maddie!  I am going to make the apple bars for sure, and the muesli for my husband.  As for the sweet potato for breakfast and the pumpkin overnight oats and the freezer pancakes – genius and helpful ideas for quick on the go breakfast.  Thank you for sharing this!

  9. That apple pie oatmeal bar recipe is soooo gooood!! I tried it today and it came out perfectly. I didn´t have any apples so I used fresh peaches from my parent´s garden, replaced 1/2 cup of oats with the same amount of coconut chips. I just had to eat 2 bars for dinner. So looking foward to tomorrow´s pre workout breakfast 😀
