I love the pumpkin pie flavor in this. It’s terrific during the fall and winter, but it’s really delicious year-round. You might be surprised that the base of this treat is actually butternut squash and apples, meaning it’s packed with fiber, vitamins and antioxidants. Add in that delicious, nutritious coconut milk and spices, and you’ve got a truly guilt-free dessert.

  1. Weird that you would call it "Pumpkin Ice Cream", yet there is no pumpkin in it. 'Pumpkin Pie Spice' is a spice. So this, while I'm sure is good, is misleading and mislabeling. You would excoriate any companies who did this, so keep yourself to the same standards. This is instead 'Squash Ice Cream', so perhaps you may want to think about labeling it as such.

  2. Vegan ice cream is a treat. If you can't bear the thought of folks occasionally indulging then stick to carrot sticks and leave everyone else alone.
