Summer is all about chilling and being gloriously lazy so I threw in all my favorite fusion flavors into one marvelous meal. It took me 20 minutes to put together and baked through – making it the perfect summer night dinner.
R E C I P E
For the pizza :
1 any pre-made pizza crust or homemade
1/2 red bell pepper – sliced
1 carrot – julienned
1/2 small red onion – thinly sliced
3 ounces baked tofu – cubed
chopped scallions for garnish
For the peanut pizza sauce :
1/2 cup creamy peanut butter
2/3 cup canned coconut milk
2 tablespoons brown sugar
4 tablespoons red curry paste
In a small saucepan over low heat, stir together peanut butter, coconut milk, brown sugar, and red curry paste until well combined and creamy. Add more coconut milk or red curry paste if desired.
1. Preheat oven to 350°F.
2. Flatten pizza dough flour and cornmeal. Evenly spread peanut sauce onto dough.
3. Add red bell peppers, baby carrots, red onions, baked tofu and finally lay some thai basil. ( or reg basils )
4. Bake for 15-20 minutes or until crust is cooked through. Remove from oven and garnish with chopped scallions.
I particularly love sauces, so I would dip my pizza in some extra peanut sauce! ENJOY!
